Chimichurri

A spicy addition and sauce for grilled meats, rice, pasta salad, bread, and more. Typically found in Argentinian and Uruguayan cuisines.

  • Food Processor I use a Ninja

Ingredients

  • 1 cup fresh flat-leaf parsley leaves Italian works great
  • 3-4 cloves garlic
  • 2 tbsp oregano I used a mixture of oregano and Italian spices
  • 1/3 cup extra virgin olive oil
  • 2 tbsp red or white wine vinegar
  • 1/2 tsp salt & pepper to taste
  • 1/4 tsp red pepper flakes
  • 1/2 cup shredded parmesan cheese optional

Instructions

  • Wash and remove parsley leaves
  • Add parsley, oregano, and garlic to foot processor and pulse several times
  • Add in olive oil, vinegar, red pepper flakes, salt and pepper and pulse again
  • Pour into serving bowl, stir, and add seasoning to taste
  • Depending how you use this sauce you can stir in parmesan cheese. I did this with Pasta Salad and it was a yummy touch!
