Chimichurri
A spicy addition and sauce for grilled meats, rice, pasta salad, bread, and more. Typically found in Argentinian and Uruguayan cuisines.

- Food Processor I use a Ninja
Ingredients
- 1 cup fresh flat-leaf parsley leaves Italian works great
- 3-4 cloves garlic
- 2 tbsp oregano I used a mixture of oregano and Italian spices
- 1/3 cup extra virgin olive oil
- 2 tbsp red or white wine vinegar
- 1/2 tsp salt & pepper to taste
- 1/4 tsp red pepper flakes
- 1/2 cup shredded parmesan cheese optional
Instructions
- Wash and remove parsley leaves
- Add parsley, oregano, and garlic to foot processor and pulse several times
- Add in olive oil, vinegar, red pepper flakes, salt and pepper and pulse again
- Pour into serving bowl, stir, and add seasoning to taste
- Depending how you use this sauce you can stir in parmesan cheese. I did this with Pasta Salad and it was a yummy touch!
