Chimichurri
A spicy addition and sauce for grilled meats, rice, pasta salad, bread, and more. Typically found in Argentinian and Uruguayan cuisines.

- 1 cup fresh flat-leaf parsley leaves Italian works great
- 3-4 cloves garlic
- 2 tbsp oregano I used a mixture of oregano and Italian spices
- 1/3 cup extra virgin olive oil
- 2 tbsp red or white wine vinegar
- 1/2 tsp salt & pepper to taste
- 1/4 tsp red pepper flakes
- 1/2 cup shredded parmesan cheese optional
Wash and remove parsley leaves
Add parsley, oregano, and garlic to foot processor and pulse several times
Add in olive oil, vinegar, red pepper flakes, salt and pepper and pulse again
Pour into serving bowl, stir, and add seasoning to taste
Depending how you use this sauce you can stir in parmesan cheese. I did this with Pasta Salad and it was a yummy touch!
